Ingredients

  • 2 cups apples, peeled, cored and chopped
  • 3/4 cup granulated sugar
  • 2 tablespoons vegetable oil
  • 1 egg
  • 1 1/2 cups white flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup cranberries, chopped
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease an 8 1/4 x 4 1/2 x 2-inch loaf pan.
  3. Combine peeled, cored, and chopped apples, granulated sugar, and vegetable oil in a medium bowl.
  4. Add the egg and mix well.
  5. In a separate bowl, combine the white flour, baking powder, baking soda, and cinnamon.
  6. Add the apple mixture to the dry ingredients.
  7. Stir until the dry ingredients are moistened, being careful not to overmix or beat.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for about 1 hour, or until the center springs back when pressed with a fingertip.
