Ingredients

  • 1/2 cup plus 2 tablespoons water
  • 1/2 cup plus 2 tablespoons sugar
  • 2 1/2 pounds Golden Delicious apples, peeled, cored, and cut into 1/2-inch dice
  • 1 1/4 cups cranberries
  • 1 teaspoon finely grated fresh ginger root
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon grated lemon zest

Instructions

  1. Combine water and sugar in a large heavy saucepan and bring to a high heat.
  2. Cook, stirring, until the sugar dissolves.
  3. Add apples, cover, and cook, stirring frequently, for 5 minutes.
  4. Add cranberries, cover, and cook until apples are very soft and cranberries have popped, about 15 to 20 minutes.
  5. Use a potato masher or wooden spoon to mash the mixture until chunky.
  6. Stir in grated ginger, ground cinnamon, and lemon zest.
  7. Cook uncovered for an additional 5 minutes.
  8. Cool, cover, and refrigerate before serving.
