A cool, fruity cranberry mousse with a hint of lemon and spice, perfect for holiday gatherings or festive occasions, combining tart cranberry, sweet pineapple, and creamy texture.

Ingredients

  • 6 oz. strawberry flavored gelatin
  • 1 cup boiling water
  • 20 oz. can crushed pineapple
  • 16 oz. can whole-berry cranberry sauce
  • 3 Tbsp. lemon juice
  • 1 tsp. grated lemon peel
  • 1/2 tsp. ground nutmeg
  • 16 oz. sour cream

Instructions

  1. In a large bowl, dissolve the strawberry flavored gelatin in boiling water.
  2. Drain the crushed pineapple, reserving the juice, and add the juice to the gelatin mixture.
  3. Stir in the crushed pineapple, cranberry sauce, lemon juice, lemon peel, and ground nutmeg.
  4. Chill the mixture until it thickens.
  5. Fold in the sour cream, reserved pineapple, and chopped pecans.
  6. Pour into a glass serving bowl or an oiled 9-cup mold.
  7. Chill until set, at least 2 hours.
