Ingredients

  • 2/3 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 Tbsp grated orange peel
  • 1-1/2 tsp vanilla
  • 2-1/2 cups all purpose flour
  • 3/4 cup dried cranberries
  • 1 tsp baking powder
  • 1/4 tsp baking soda

Instructions

  1. In a large bowl, mix sugar, vegetable oil, eggs, grated orange peel, and vanilla with a spoon.
  2. Add all-purpose flour, baking powder, and baking soda to the mixture and stir until combined.
  3. Fold in the dried cranberries.
  4. Divide the dough in half and shape each into a log on a parchment-lined baking sheet.
  5. Bake at 350°F (175°C) for 25-30 minutes until golden.
  6. Remove from oven and let cool for 10 minutes.
  7. Slice the logs into 1/2-inch slices diagonally.
  8. Arrange slices on baking sheet and bake for an additional 10 minutes until crisp.
  9. Cool completely before serving.
