Ingredients

  • 1 loaf day old Italian bread, cubed, crust removed
  • 1 lb. Feta cheese or mozzarella
  • 8 plum tomatoes
  • 1/2 medium red onion, sliced thin and diced
  • 1 large pepper, diced
  • 1 can black olives, quartered
  • 3 cloves garlic, chopped fine
  • 1/2 cup grated Romano cheese
  • 1/2 to 3/4 cup olive oil
  • 1/8 tsp. salt
  • Fresh parsley (optional)

Instructions

  1. Combine bread, tomatoes, onion, garlic, olives, Feta, grated cheese, and basil in a large mixing bowl.
  2. Pour olive oil over all ingredients and mix well to combine.
  3. Cover and refrigerate to allow flavors to blend, ideally making ahead.
  4. Add black pepper and salt if needed before serving.
