Ingredients

  • 2 c. chopped chicken breast
  • 1 c. chopped celery
  • 1/2 c. slivered almonds
  • 3 hard-boiled eggs
  • 1/2 c. cracker crumbs
  • 2 Tbsp. minced onion
  • 1/2 c. mayonnaise
  • 1/2 tsp. black pepper
  • 1 tsp. lemon juice
  • 1 c. cream of chicken soup
  • 1 c. crushed potato chips

Instructions

  1. Mix all ingredients except the crushed potato chips and additional almonds and pour into a 1 1/2-quart casserole dish.
  2. Top with additional slivered almonds and the crushed potato chips.
  3. Bake at 350°F for 40 minutes.
