Cranberry-Tangerine Conserve

A vibrant and tart cranberry-tangerine conserve combining the bright citrus flavor with tart cranberries and crunchy walnuts, perfect for spreading on toast or serving with cheese.

Ingredients

  • 3 or 4 tangerines
  • 2 c. water
  • 1 (12 oz.) pkg. cranberries
  • 1 (1 3/4 oz.) pkg. powdered fruit pectin
  • 6 1/2 c. sugar
  • 1 c. chopped walnuts

Instructions

  1. Remove peel from tangerines; scrape off excess white membrane. Cut and peel into very thin strips.
  2. Reserve 3/4 cup of the tangerine strips.
  3. In a large saucepan, combine water, cranberries, and the remaining tangerine strips.
  4. Bring to a boil, then reduce heat and simmer until cranberries burst and mixture thickens, about 10 minutes.
  5. Stir in powdered fruit pectin and cook for an additional 2 minutes.
  6. Add sugar gradually, stirring constantly until fully dissolved.
  7. Return to a boil and cook for 3-5 minutes, stirring frequently.
  8. Remove from heat and stir in chopped walnuts.
  9. Pour hot conserve into sterilized jars, leaving appropriate headspace.
  10. Seal jars and cool completely before storing.
