Ingredients

  • 1/4 cup onion, chopped
  • 1/2 teaspoon low-fat margarine
  • 1 medium garlic clove, minced
  • 1 medium tomato, raw
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground oregano
  • 1/8 teaspoon thyme
  • 1/8 teaspoon pepper
  • 8 ounces orange roughy
  • 1/4 cup white table wine
  • 1 1/2 teaspoons tomato paste

Instructions

  1. Preheat oven to 350°F.
  2. Chop and seed the tomato.
  3. In an ovenproof skillet, over medium heat, sauté onion and garlic in margarine until soft, about 5 minutes.
  4. Stir in the chopped tomato and seasonings.
  5. Cover and simmer for 5 minutes.
  6. Place the fish in the skillet; cover with sauce and pour wine over the fish.
  7. Cover and bake for 15 to 20 minutes or until the fish flakes with a fork.
  8. Remove the fish to a heated platter.
  9. Reduce the sauce on top of the range to 1/3 cup.
  10. Stir in the tomato paste and pour the sauce over the fish.
  11. Serve with lemon wedges.
