Crazy Corn Nachos

Ingredients
- 1 Tbsp vegetable oil
- 1/2 cup finely chopped onion ⓘ
- 4 oz diced green chiles ⓘ
- 8 oz softened cream cheese ⓘ
- 1 to 2 tsp ground cumin ⓘ
- salt to taste ⓘ
- pepper to taste ⓘ
- 2 cups shredded Monterey Jack cheese ⓘ
- large bag tortilla chips ⓘ
- 1/2 cup diced red pepper ⓘ
- 3/4 cup kernel corn ⓘ
- 1 cup sour cream
- 1 to 2 tsp chili powder ⓘ
- cayenne pepper to taste ⓘ
- 4 slices bacon, crumbled ⓘ
Instructions
- In a large skillet, heat vegetable oil over medium heat.
- Sauté diced red pepper, chopped onion, and corn until soft.
- Stir in diced green chiles.
- Add softened cream cheese and ground cumin; stir until melted and combined.
- Season with salt, pepper, chili powder, cayenne pepper to taste.
- Spread tortilla chips on a large baking dish or oven-safe platter.
- Pour the cheese mixture over the chips evenly.
- Sprinkle shredded Monterey Jack cheese over the top.
- Bake in a preheated oven at 375°F (190°C) for about 10 minutes, until cheese is melted and bubbly.
- Remove from oven, sprinkle crumbled bacon and sliced jalapenos on top.
- Serve with sour cream on the side.
