Ingredients

  • 1 Tbsp vegetable oil
  • 1/2 cup finely chopped onion
  • 4 oz diced green chiles
  • 8 oz softened cream cheese
  • 1 to 2 tsp ground cumin
  • salt to taste
  • pepper to taste
  • 2 cups shredded Monterey Jack cheese
  • large bag tortilla chips
  • 1/2 cup diced red pepper
  • 3/4 cup kernel corn
  • 1 cup sour cream
  • 1 to 2 tsp chili powder
  • cayenne pepper to taste
  • 4 slices bacon, crumbled

Instructions

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Sauté diced red pepper, chopped onion, and corn until soft.
  3. Stir in diced green chiles.
  4. Add softened cream cheese and ground cumin; stir until melted and combined.
  5. Season with salt, pepper, chili powder, cayenne pepper to taste.
  6. Spread tortilla chips on a large baking dish or oven-safe platter.
  7. Pour the cheese mixture over the chips evenly.
  8. Sprinkle shredded Monterey Jack cheese over the top.
  9. Bake in a preheated oven at 375°F (190°C) for about 10 minutes, until cheese is melted and bubbly.
  10. Remove from oven, sprinkle crumbled bacon and sliced jalapenos on top.
  11. Serve with sour cream on the side.
