Ingredients

  • 1/4 cup margarine
  • 1 egg yolk
  • 1 package yellow cake mix
  • 1 1/4 cups raisins
  • 1/2 cup chopped nuts
  • 8 ounces cream cheese
  • 1 teaspoon vanilla
  • 1/2 cup coconut

Instructions

  1. Beat margarine, cream cheese, vanilla, and egg yolk until smooth.
  2. Gradually blend in the cake mix, one-third at a time. Mix well after each addition.
  3. If the mixture is too thick, add about 1 tablespoon of water and mix.
  4. Stir in raisins, chopped nuts, and coconut until evenly distributed.
  5. Drop by teaspoons onto an ungreased cookie sheet.
  6. Bake at 350°F (175°C) for about 15 minutes or until lightly browned.
  7. Allow cookies to cool before serving.
