Ingredients

  • 3 leeks (white part only), shredded

  • 1 stick margarine, melted
  • 2 c. chicken broth
  • 2 large potatoes, shredded
  • 1 c. light cream
  • 1 c. chicken stock
  • parsley, bacon bits

Instructions

  1. Saute leeks and onion in melted margarine in a 2-quart pot for 10 minutes.
  2. Add 2 cups of chicken broth and shredded potatoes.
  3. Cook for 30 minutes.
  4. Remove half of the soup and puree it.
  5. Return the pureed soup to the remaining soup and add cream and chicken stock (more if too thick).
  6. Serve and garnish with parsley and bacon bits.
