Ingredients

  • 1 qt. whipping cream
  • 2 1/4 qt. milk
  • 2 tsp. salt
  • 3 c. flour

Instructions

  1. Boil the whipping cream for 10 minutes or until it stops foaming.
  2. Stir in 3 tablespoons of flour or enough to make a thin porridge.
  3. Allow the fat to separate.
  4. Remove the kettle from heat and set aside for 3 minutes with the cover on.
  5. Remove the separated fat from the mixture.
  6. If desired, place the kettle over heat again to remove more fat, adding a couple of spoons of cold water to aid the process.
  7. Sift the remaining flour into the mixture, then gradually stir in hot milk.
  8. Cook until the mixture is slightly thickened.
  9. Add salt to the pudding once cooked.
  10. Serve with sugar, cinnamon, and the hot fat.
