Ingredients

  • 2 c. fresh corn, cut and scraped from cob
  • 1/2 c. margarine, melted
  • 1/4 to 1/2 c. water
  • 1 Tbsp. corn meal
  • 1 tsp. sugar
  • salt and pepper to taste

Instructions

  1. Combine corn, melted margarine, water, corn meal, sugar, salt, and pepper in a 1 1/2 to 2-quart casserole dish. Cover tightly with a glass lid or plastic wrap.
  2. Microwave on High for 3 minutes.
  3. Stir well and rotate the dish 1/2 turn.
  4. Microwave on High for 5 minutes.
  5. Stir well. Let stand, covered, for 3 minutes.
