Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 1/2 c. light cream
  • dash of Tabasco
  • 3 to 4 Tbsp. dry sherry
  • 1 1/2 c. crabmeat

Instructions

  1. Melt butter in a saucepan; stir in flour until blended and smooth.
  2. Slowly add light cream, stirring constantly, until the mixture is smooth and thickened.
  3. Add a dash of Tabasco and 3 to 4 tablespoons of dry sherry.
  4. Cook over very low heat for 3 minutes.
  5. Add crabmeat and salt to taste.
  6. Cook only until heated through.
  7. Serve over toast or rice.
