  • 1 tsp. minced fresh garlic

Instructions

  1. Melt butter in a large stockpot over medium heat.
  2. Add chopped onion, celery, and carrots; cook about 4 minutes until tender.
  3. Add salt, dried thyme leaves, bay leaves, mustard seeds, and ground white pepper; stir to coat the vegetables.
  4. Pour in vegetable stock, add grated potato, and sliced asparagus rounds; bring the mixture to a boil.
  5. Reduce heat, partially cover, and simmer for 30 minutes.
  6. Remove bay leaves from the soup.
  7. Puree half of the soup in a blender or food processor and return it to the pot.
  8. Add the reserved asparagus tips and simmer for an additional 4 minutes.
  9. Remove from heat and stir in minced fresh garlic.
  10. Ladle soup into bowls and garnish with chopped fresh dill.
