Ingredients

  • 1 1/3 cups canned whole kernel corn
  • 1 1/3 cups canned cream-style corn
  • 1 stick butter or margarine, melted
  • 1 cup sour cream
  • 2 eggs, beaten
  • 8 1/2 oz. package corn muffin mix
  • 3/4 cup Cheddar cheese, grated

Instructions

  1. Preheat oven to 375°F.
  2. Stir canned whole kernel corn, canned cream-style corn, and melted butter in a deep 2-quart baking dish.
  3. Fold in sour cream and beaten eggs; then add the corn muffin mix and blend well.
  4. Bake until the center of the spoon bread is set, approximately 1 hour.
  5. Sprinkle grated Cheddar cheese over the top and bake for an additional 5 minutes.
  6. Serve hot.
