Ingredients

  • 3 oz. package cream cheese, softened
  • 1 package lime gelatin
  • 1 cup boiling water
  • 1/4 cup mayonnaise
  • 1 can fruit cocktail, drained
  • 1/2 cup chopped pecans

Instructions

  1. Beat the cream cheese and lime gelatin together until well combined.
  2. Add boiling water; stir until the gelatin is dissolved.
  3. Refrigerate until the mixture thickens, about 1 hour, stirring frequently.
  4. Add mayonnaise; whisk until the mixture is smooth.
  5. Stir in the drained fruit cocktail and chopped pecans.
  6. Pour the mixture into a 1-quart mold sprayed with cooking spray.
  7. Chill until firm.
  8. Invert onto a serving platter before serving.
