Ingredients

  • 1 cup chicken stock or consomme
  • 1 cup instant rice
  • 1/2 cup mayonnaise
  • 2 cups diced cooked turkey or chicken
  • 2 hard-boiled eggs
  • 1 cup grated Cheddar cheese
  • 1/2 cup grated onion
  • 1 can cream of chicken soup
  • 3 tablespoons Worcestershire sauce

Instructions

  1. Cook rice in chicken stock or consomme until tender.
  2. Do not drain the rice after cooking.
  3. Add mayonnaise, diced cooked turkey or chicken, hard-boiled eggs, grated Cheddar cheese, grated onion, cream of chicken soup, and Worcestershire sauce to the rice.
  4. Mix well to combine.
  5. Pour the mixture into a large, buttered casserole dish.
  6. Sprinkle with cracker crumbs on top.
  7. Bake at 350°F (175°C) for 30 minutes until bubbly and golden.
