Ingredients

  • 1 cup white granulated sugar
  • 5 eggs
  • 1/4 teaspoon salt
  • 3 cups milk
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Butter eight 6-ounce custard cups.
  2. In a small skillet over medium heat, melt 1/2 cup sugar, stirring, until it forms a light brown syrup.
  3. Pour the caramel syrup into the buttered cups.
  4. Place the cups in a shallow baking pan for easy handling.
  5. Preheat the oven to 300°F (150°C).
  6. In a large bowl, beat eggs, salt, and 1/2 cup sugar at low speed until lemon-colored.
  7. Gradually beat in milk and vanilla extract.
  8. Pour the mixture into the prepared cups.
  9. Put hot water into the baking pan to within 1 inch of the top of the cups.
  10. Bake for 1 hour, or until a knife inserted in the center comes out clean.
  11. Cool on wire racks.
  12. Refrigerate until ready to serve.
  13. Use a knife to loosen the custard from the cups and invert onto dessert plates, allowing the syrup to run down the sides.
