Ingredients

  • 1 lb. broccoli, cut into thin stalks
  • 1 cauliflower, cut into florets
  • 1 large zucchini, sliced 1/4-inch
  • 1 patty pan or scallop squash, sliced 1/4-inch
  • 6 to 8 mushrooms, washed and halved
  • 1 sweet red pepper, seeded and cut into strips
  • 1 green bell pepper, seeded and cut into strips
  • 1/4 cup butter, melted
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper

Instructions

  1. Arrange vegetables on a large round glass platter that will fit in the microwave.
  2. Place broccoli around the edge; arrange cauliflower next to the broccoli.
  3. Alternate slices of zucchini, patty pan or scallop squash, halved mushrooms, and pepper strips toward the center of the dish.
  4. Combine melted butter, garlic salt, and pepper; then drizzle over the vegetables.
  5. Cover with waxed paper and microwave for 10 to 15 minutes.
