Ingredients

  • 2 young pheasants (about 2 lb. each)
  • 1/4 cup melted, unsalted butter
  • 1 1/2 teaspoons salt
  • wild rice and mushroom dressing

Instructions

  1. Cut off the necks of the birds close to the bodies, leaving the neck skin on to help hold the stuffing.
  2. Remove pin feathers; singe if needed.
  3. Rinse the pheasants inside and out in warm water.
  4. Drain and pat dry.
