Ingredients

  • 2 lb. haddock fillets
  • 1 1/2 c. chopped fresh tomatoes
  • 1/2 c. chopped green pepper
  • 1/3 c. lemon juice
  • 1 Tbsp. safflower oil
  • 2 tsp. salt
  • 2 tsp. instant minced onion
  • 1 tsp. crushed basil leaves
  • 1/4 tsp. coarse black pepper
  • 4 drops hot sauce

Instructions

  1. Place fillets in a 13 1/2 x 9 x 2-inch baking dish.
  2. Combine chopped fresh tomatoes, chopped green pepper, lemon juice, safflower oil, salt, instant minced onion, crushed basil leaves, black pepper, and hot sauce.
  3. Spoon the mixture over the fillets.
  4. Bake at 500° for 5 to 8 minutes.
