Creole Peppers

A flavorful Creole-inspired dish featuring green peppers, celery, and bacon, simmered with hot peppers and seasoned cornmeal for a hearty, spicy, and smoky flavor profile.

Ingredients

  • 2 or 3 green peppers
  • 1 medium bunch celery
  • 1 medium onion
  • 1 tsp salt
  • dash pepper
  • 4 slices bacon
  • 3 Tbsp bacon drippings
  • 1 hot pepper
  • 2 Tbsp cornmeal

Instructions

  1. Cook bacon until crisp; set aside.
  2. Add coarsely cut peppers, celery, and onion to bacon drippings in the skillet.
  3. Saute slowly until the onion is tender but not browned.
  4. Add tomatoes, hot pepper, salt, and pepper. Cover and simmer for 20 minutes.
  5. Blend cornmeal with a little water and stir into the simmering mixture.
  6. Cover and simmer for another 5 minutes. Crumble bacon on top before serving.
