- Cook bacon until crisp; set aside.
- Add coarsely cut peppers, celery, and onion to bacon drippings in the skillet.
- Saute slowly until the onion is tender but not browned.
- Add tomatoes, hot pepper, salt, and pepper. Cover and simmer for 20 minutes.
- Blend cornmeal with a little water and stir into the simmering mixture.
- Cover and simmer for another 5 minutes. Crumble bacon on top before serving.
