Ingredients

  • 1 large green pepper, sliced in thin strips
  • 1 1/2 cups sliced green onions with tops
  • 2 tablespoons butter or margarine
  • 1 (14 1/2 to 16 oz.) can chopped tomatoes
  • 1 (8 oz.) can tomato sauce
  • salt
  • pepper
  • 1/2 teaspoon thyme
  • 1 bay leaf
  • 1 1/2 pounds flounder fillets or other white fish

Instructions

  1. Saute green pepper and green onions in butter until tender, but not brown.
  2. Stir in chopped tomatoes, tomato sauce, 1 teaspoon salt, 1/4 teaspoon pepper, thyme, and bay leaf.
  3. Simmer gently for 15 minutes.
  4. Remove bay leaf.
  5. Arrange fish fillets in a lightly greased shallow baking pan.
  6. Season fish with salt and pepper.
  7. Spoon sauce over fillets.
  8. Bake at 375°F for 15 minutes or until fish flakes easily with a fork.
  9. Serve over beds of hot buttered cooked rice.
