Creole Tomatoes is a flavorful dish featuring stuffed tomatoes filled with a savory mixture of eggs, bacon, onions, and herbs. Ingredients

  • 12 large firm tomatoes
  • 8 hard-boiled eggs
  • 6 slices bacon
  • 2 onions
  • 2 Tbsp. parsley
  • 1 1/2 sticks butter
  • bread crumbs
  • salt
  • pepper

Instructions

  1. Cook bacon until crisp. Drain, chop and set aside.
  2. In a skillet, leave just enough bacon grease to saute onions until transparent.
  3. Add to this the pulp, scooped carefully with a teaspoon, from the tomatoes, without scraping shells too thin.
  4. Add the mashed eggs and enough bread crumbs to make a firm mixture.
  5. Season with butter, salt, pepper, and parsley. If necessary, add a little canned tomato juice.
  6. Add bacon last and stuff the tomatoes with the mixture.
  7. Sprinkle the tops with buttered bread crumbs.
  8. Place stuffed tomatoes in a baking dish and bake at 350°F until thoroughly heated and bread crumbs are browned.
  9. Do not cook long enough for tomatoes to lose their shape.
  10. Serve hot.
