Cretan Shrimp

Ingredients

  • 6 Tbsp. olive oil
  • 1/4 c. chopped onion
  • 1 clove garlic, chopped
  • 1 (28 oz.) can tomatoes with liquid
  • 1/2 c. dry white wine
  • 2 Tbsp. finely chopped parsley
  • 1/2 tsp. oregano
  • 1 tsp. salt
  • 1 1/2 lb. raw shrimp, cleaned
  • Parmesan cheese (can use Feta cheese)

Instructions

  1. Heat oil over medium heat in heavy skillet.
  2. Add onion and garlic.
  3. Cook until soft and transparent, about 5 minutes.
  4. Stir in tomatoes, wine, 1 tablespoon parsley, oregano, salt and pepper. Bring to a boil and cook briskly until pureed.
  5. Add shrimp; cook over moderate heat for 5 minutes or until pink and firm.
  6. Stir in cheese and remaining parsley.
  7. Serve with pasta.
  8. Serves 4.
