Ingredients

  • 3 1/2 c. boiling water
  • 2 chicken bouillon cubes
  • 1 pkg. frozen peas
  • 1 Tbsp. oil
  • 1 to 2 cans Del Monte chili style tomatoes
  • 2 c. long grain rice

Instructions

  1. Cook onion in oil until transparent.
  2. Add minced garlic and stir about a minute.
  3. Add tomatoes to the mixture.
  4. Dissolve chicken bouillon cubes in 3 1/2 cups boiling water.
  5. Bring the water to a boil.
  6. Add rice and bring to a boil again.
  7. Lower heat to low and cover with a lid.
  8. Cook for 20 minutes.
  9. If rice is done and excess liquid remains, lift lid to check.
  10. If rice is not tender, leave lid on and cook longer.
  11. About 15 minutes into cooking, add the frozen peas on top of the rice, do not stir in until serving.
