Ingredients

  • 4 large chicken breasts
  • 2 chicken tamales
  • 1 can pitted olives
  • 1 can cream of chicken soup
  • 1 can stewed tomatoes
  • 1 large carton sour cream
  • 1 medium onion
  • 1 green pepper
  • 1 tsp garlic powder
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 cup grated cheese

Instructions

  1. Mix garlic powder, pepper, and chili powder.
  2. Rub the spice mixture into the skinned chicken breasts.
  3. Fry the chicken lightly, then cover with stewed tomatoes and cook on low until tender.
  4. Debone the chicken and cut into bite-size pieces.
  5. Save 1 cup of tomato liquid and tomato chunks from the stewed tomatoes.
  6. Fry chopped onion and green pepper; add cut-up tamales, cream of chicken soup, sour cream, tomato chunks, olives (drained), and chicken pieces.
  7. Pour the mixture into a casserole dish and cover with grated cheese.
  8. Bake at 350°F uncovered for 45 minutes.
