Crisp chocolate truffles combine smooth chocolate and marshmallow flavors with crunchy rice cereal, coated in white chocolate for a delightful treat perfect for parties and special occasions.

Ingredients

  • 7 oz. marshmallow cream
  • 2 Tbsp. margarine or butter
  • 6 oz. semi-sweet chocolate chips
  • 2 c. crisp rice cereal
  • 14 oz. white candy coating
  • 2 Tbsp. shortening
  • Multicolored sprinkles (optional)

Instructions

  1. In a heavy 2-quart saucepan, combine marshmallow cream, margarine, and chocolate chips.
  2. Cook over low heat, stirring constantly, until the chocolate is melted and the mixture is smooth; remove from heat.
  3. Stir in the rice cereal until thoroughly combined.
  4. Drop by rounded teaspoonfuls onto waxed paper-lined baking sheets.
  5. Refrigerate until firm, about 1 hour.
  6. In a double boiler over hot water, melt the white coating and shortening.
  7. Dip each chocolate ball into the melted coating and place on waxed paper-lined baking sheets.
  8. Decorate with sprinkles, if desired.
  9. Refrigerate until the coating is firm.
  10. Place in small candy paper cups to serve.
