Ingredients

  • 7 lb. cucumbers
  • 2 gal. water
  • 3 c. slack lime
  • 1/2 tsp. alum
  • 4 lb. sugar
  • 3 pt. white vinegar
  • 1 tsp. cloves

Instructions

  1. Slice the cucumbers and soak them in lime water for 24 hours.
  2. Drain the cucumbers and soak them in fresh water for 4 hours, changing the water every hour.
  3. Use alum in the first water soak.
  4. Boil sugar, white vinegar, and spices together.
  5. Pour the hot syrup over the soaked cucumbers.
  6. Let the cucumbers stand overnight in the syrup.
  7. The next morning, boil the mixture for 1 hour.
  8. Seal the cucumbers in jars for storage.
