Ingredients

  • 1 1/2 sticks butter, melted and divided
  • 1/2 small onion, chopped
  • 1 cup celery, chopped
  • 1 (16 oz.) can cream-style corn
  • 1 (8 oz.) package herb stuffing mix
  • 3 egg yolks, slightly beaten

Instructions

  1. Preheat oven to 375°F.
  2. Melt 1/2 stick of butter in a medium saucepan.
  3. Sauté chopped onion and chopped celery until soft.
  4. Remove from heat and add cream-style corn and 3/4 cup water; stir.
  5. Bring the mixture to a boil, then remove from heat.
  6. Place stuffing mix in a large bowl.
  7. Pour the hot corn mixture over the stuffing mix and mix lightly.
  8. Add the egg yolks and combine.
  9. Shape the mixture into 10 to 12 balls.
  10. Spray a shallow baking dish with vegetable cooking spray.
  11. Place the balls in the dish.
  12. Pour 1 stick of melted butter over the balls.
  13. Bake until golden brown, about 20 minutes.
