Ingredients

  • 6 medium catfish
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 (2 oz.) bottle hot sauce
  • 2 c. self-rising cornmeal
  • vegetable oil

Instructions

  1. Sprinkle the catfish with salt and pepper, then place in a shallow dish.
  2. Add hot sauce to the dish and marinate in the refrigerator for 1 to 2 hours.
  3. Place the self-rising cornmeal in a plastic bag.
  4. Drop the marinated catfish into the bag one at a time and shake until completely coated.
  5. Heat vegetable oil to 375°F (190°C) in a deep fryer or large pot.
  6. Fry the coated catfish until they float to the top and are golden brown, about 3-4 minutes per batch.
  7. Drain well on paper towels and serve hot.
