Ingredients

  • 1 stick butter, melted
  • 1 onion, minced
  • 2 Tbsp. bell pepper, minced
  • 3 Tbsp. flour
  • 1 can Pet milk
  • 1 small jar pimento, chopped fine
  • 3 cans crab meat
  • grated nutmeg
  • cayenne pepper
  • salt
  • 1 tsp. Lea & Perrins
  • 1/2 lb. grated Cheddar cheese

Instructions

  1. In a double boiler, melt the butter.
  2. Saute the minced onion and bell pepper in the melted butter.
  3. Add the flour to the mixture.
  4. Combine the Pet milk with an equal amount of water to make a milk mixture.
  5. Add the milk mixture to the sauteed vegetables and flour to make a cream sauce.
  6. Stir in the chopped pimento, crab meat, grated nutmeg, cayenne pepper, salt, and Lea & Perrins.
  7. Add the grated Cheddar cheese to the mixture.
  8. Heat in the top of the double boiler, stirring until the mixture thickens.
  9. If the mixture becomes too thick for a dip, add a little half and half to thin it out.
  10. Transfer the dip to a chafing dish and serve with Melba toast.
