Ingredients

  • juice of 1/2 lemon
  • 1 Tbsp. butter, melted
  • 1 c. finely crushed wheat crackers
  • 1/2 tsp. onion powder
  • 1/2 tsp. paprika

Instructions

  1. Combine lemon peel, lemon juice, and melted butter in a bowl.
  2. Separately, mix crushed wheat crackers, onion powder, and paprika in another bowl.
  3. Dip chicken pieces into the lemon and butter mixture to coat evenly.
  4. Then coat the chicken with the cracker mixture, pressing gently to adhere.
  5. Arrange the coated chicken on a rack in a shallow baking pan.
  6. Bake uncovered at 400°F for 35 minutes or until tender and golden brown.
