Ingredients

  • 1/4 cup butter, melted
  • 1 tablespoon scallions, chopped
  • 1 tablespoon parsley, chopped
  • 1/4 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 large unpeeled potatoes, thinly sliced
  • 1 1/2 cups shredded Cheddar cheese (optional)

Instructions

  1. Preheat oven to 425°F.
  2. Lightly grease a 13 x 9 x 2-inch baking dish.
  3. Combine melted butter with chopped scallions, parsley, thyme, salt, and pepper.
  4. Layer the thinly sliced potatoes in the baking dish, brushing each layer with the butter mixture.
  5. Bake for 40 minutes or until the potatoes are tender.
  6. Sprinkle shredded Cheddar cheese over the potatoes and bake for an additional 5 minutes until cheese is melted.
  7. Serve hot as a side dish with pork or sausage.
