Ingredients

  • 2 lb. stewing beef, roast or round roast
  • 4 Tbsp. chopped onion
  • 1 c. tomato juice
  • 3 Tbsp. vinegar
  • 3 Tbsp. Worcestershire sauce
  • 1 tsp. salt
  • 1 tsp. paprika

Instructions

  1. Boil the beef in an open pan for 15 minutes with 1/4 cup vinegar and enough water to cover.
  2. Pour off all the liquid after boiling.
  3. Put the beef in a pressure cooker with water, salt, and pepper.
  4. Add 1/2 an apple and a small onion in the cavity of the roast.
  5. Cook the beef for about 2 hours at 10 pounds pressure.
  6. Remove the beef and use the liquid to make a dressing if desired.
