Crockpot Barbacoa
Ingredients
- 13 cups Apple Cider Vinegar ⓘ
- 2 whole Limes, Juiced ⓘ
- 3 whole Chipotle Peppers In Adobo Sauce (no Sauce, Just The Peppers) ⓘ
- 4 cloves Garlic ⓘ
- 1 Tablespoon (heaping) Cumin ⓘ
- 1 Tablespoon Oregano ⓘ
- 1- 1/2 teaspoon Ground Black Pepper ⓘ
- 1- 1/2 teaspoon Salt ⓘ
- 1/2 teaspoons Ground Cloves ⓘ
- 3- 1/2 pounds Beef Chuck Roast ⓘ
- 1 cup Chicken Broth ⓘ
- 3 whole Bay Leaves ⓘ
- 8 whole Burrito-sized Flour Tortillas
- 2 cups Shredded Colby Cheese ⓘ
- 2 cups Shredded Lettuce ⓘ
Instructions
- In a food processor (or blender), combine vinegar, lime juice, chipotle peppers, garlic cloves, cumin, oregano, pepper, salt and ground cloves.
- Process on high until smooth.
- In a large crockpot, add roast, pepper puree, chicken broth, and bay leaves.
- Heat on low 68 hours.
- Remove the bay leaves, shred beef and place the beef back in the juice.
- Serve on a tortilla with cilanto-lime rice, colby cheese, lettuce and guacamole.
