Ingredients

  • 1/4 cup margarine
  • 3 pounds cut-up chicken
  • 1 egg
  • 2 tablespoons milk
  • 1 cup instant mashed potato flakes
  • 1/2 cup Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Melt margarine in a flat baking dish.
  2. Combine egg and milk in a bowl and set aside.
  3. Mix potato flakes, Parmesan cheese, salt, and pepper together in a separate bowl.
  4. Dip each chicken piece first in the egg and milk mixture, then roll in the potato flake mixture until well coated.
  5. Place the coated chicken pieces in the baking dish. Reserve any leftover potato mixture.
  6. Bake the chicken uncovered at 400°F for 30 minutes.
  7. Turn the chicken pieces and sprinkle with the reserved potato flakes mixture.
  8. Bake for an additional 30 minutes or until the chicken is tender and cooked through.
