  • 1 c. margarine
  • 2 1/2 c. Rice Krispies
  • 3/4 c. brown sugar
  • 1 1/4 c. coconut
  • 1 c. broken pecans or walnuts
  • 1/2 gal. vanilla ice cream, softened

Instructions

  1. Preheat oven to 300°F (150°C). Melt margarine in the oven for about 10 minutes.
  2. Remove from oven and add Rice Krispies, brown sugar, coconut, and nuts. Mix well.
  3. Return to oven and bake for about 30 minutes, stirring occasionally, until mixture is slightly brown. Cool.
  4. Layer half of the mixture in a cake pan. Spread softened vanilla ice cream over this layer.
  5. Top with the remaining mixture as a topping.
  6. Freeze until firm.
  7. Cut into squares and serve. Delicious with maple syrup drizzled over the top.
