Crusted Lamb Chops

- Preheat the oven to 400°F. Brush lamb and tomatoes with olive oil. Season to taste. Arrange on foil-lined baking pan.
- For the crust, pulse breadcrumbs, olives, parsley, Parmesan cheese and oil in a food processor until mixture is well chopped. Press crust mixture on top of lamb chops.
- Bake for 10-15 mins, until lamb is cooked to desired doneness and crust is golden. Serve with roasted tomatoes and green beans.
