Ingredients

  • 1 package frozen chopped spinach
  • 1/2 cup chopped onion
  • 2 eggs
  • 1 1/2 cups low-fat ricotta cheese
  • salt and pepper
  • 1/4 teaspoon dried dill weed
  • 1/8 teaspoon garlic powder
  • 2 teaspoons flour
  • 1/8 teaspoon paprika

Instructions

  1. Combine spinach and chopped onion in a 1 1/2-quart casserole dish.
  2. Cover and microwave for 4 to 6 minutes, stirring once during cooking.
  3. Drain the spinach and onion mixture well.
  4. In a medium bowl, beat the eggs with a fork.
  5. Stir in ricotta cheese, salt, pepper, dried dill weed, garlic powder, and flour.
  6. Blend in the drained spinach and onion mixture.
  7. Spread the mixture in a 9-inch pie plate.
  8. Sprinkle the top with paprika.
  9. Microwave on high for 4 minutes, rotating every 2 minutes.
  10. Reduce microwave power to 50% (medium) and microwave for 3 to 11 minutes longer, or until the center is set.
  11. Let stand for 5 minutes before serving.
