A savory, crustless spinach pie combining tender spinach, melted mozzarella, and cottage cheese for a cheesy, nutritious dish perfect for brunch or light dinners.

Ingredients

  • 10 oz. frozen chopped spinach
  • 4 Tbsp. margarine, melted
  • 3 Tbsp. flour
  • 3 eggs
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 8 oz. cottage cheese
  • 1 1/2 c. grated Mozzarella cheese

Instructions

  1. Thaw and drain the frozen chopped spinach.
  2. Combine the drained spinach, melted margarine, flour, slightly beaten eggs, salt, pepper, cottage cheese, and grated mozzarella cheese in a bowl and mix well.
  3. Spoon the mixture into a greased pie plate or quiche dish.
  4. Bake at 350°F (175°C) for 30 minutes until set and golden.
