Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup soft butter or margarine
  • 1 cup sugar
  • 1/2 teaspoon almond extract
  • 2 eggs
  • 1 cup crushed hulled strawberries

Instructions

  1. Stir together flour, salt, baking powder, and baking soda; set aside.
  2. In a medium bowl, cream together butter, sugar, and almond extract.
  3. Add eggs, one at a time, beating thoroughly after each addition.
  4. Add flour mixture and crushed strawberries, mixing only until blended.
  5. Grease an 8 x 4 x 2-inch loaf pan, then line with wax paper and grease the paper.
  6. Turn batter into the prepared pan, smoothing the top evenly with a spoon.
  7. Bake at 325°F (163°C) for 50 to 60 minutes or until a pick inserted into the center comes out clean.
  8. Let bread stand in the pan on a cake rack for 10 minutes, then turn out onto the rack.
  9. Peel off the paper and turn the bread right side up to cool completely.
  10. When cool, wrap airtight and let the bread stand for one day before slicing.
