Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup buttermilk
  • 1/4 cup bacon drippings

Instructions

  1. Combine cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt; mix well.
  2. Add beaten egg and buttermilk to the dry ingredients; stir until smooth.
  3. Place bacon drippings in a 9-inch cast-iron skillet.
  4. Heat the skillet at 425°F for 5 minutes.
  5. Remove skillet from oven and pour hot bacon drippings into the batter; mix well.
  6. Quickly pour the batter into the hot skillet.
  7. Bake at 425°F for 20 to 25 minutes or until golden.
