- In a large mixing bowl, combine 2 cups of the unbleached flour and the yeast.
- Add sugar and salt to the dry mixture and whisk well.
- Add warm-hot water and canola oil to the mixture.
- Beat at low speed of electric mixer for 1/2 minute, scraping the sides of the bowl constantly.
- Beat 3 minutes at high speed.
- By hand, stir in enough of the remaining flour to make a moderately stiff dough.
- Turn out onto a lightly floured surface and knead until smooth and elastic, about 8 to 10 minutes.
- Shape the dough into a ball and place it in a greased bowl, turning once to grease the entire surface.
