Ingredients

  • 1 (3 to 3 1/2 lb.) fryer chicken, cut up
  • 2 Tbsp. salad oil
  • 2 cloves garlic, chopped
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1 (15 oz.) can tomato sauce or chopped tomatoes
  • 4 small, thin skinned potatoes, in 1-inch chunks
  • 3/4 tsp. dry oregano
  • 3/4 tsp. dry cumin
  • 3/4 c. dry white wine
  • 1/2 c. raisins
  • 1/2 c. pitted black olives
  • 1 c. frozen peas

Instructions

  1. Simmer the chicken in oil for 15 minutes, then remove from pan.
  2. Add garlic, chopped onion, and chopped green pepper to the pan and cook for 4 minutes.
  3. Add tomato sauce or chopped tomatoes, potatoes, spices, white wine, raisins, and olives to the pan.
  4. Return the chicken to the pan and simmer for about 35 minutes until cooked through.
  5. Stir in frozen peas and cook for an additional 2 to 3 minutes until peas are done.
