Ingredients
- 1 cup cooked rice, cooled to room temperature ⓘ
- 1 large tomato, peeled and diced ⓘ
- 1/2 cup chopped parsley ⓘ
- 1/3 cup chopped green onions ⓘ
- 2 cloves garlic, minced ⓘ
- 3 tablespoons plain nonfat yogurt or sour cream ⓘ
- 1 tablespoon lemon juice ⓘ
- 1 tablespoon olive oil ⓘ
- 1/4 teaspoon ground white pepper ⓘ
- 2 to 3 large cucumbers, peeled ⓘ
Instructions
- Combine rice, tomato, parsley, green onions, garlic, yogurt or sour cream, lemon juice, olive oil, and white pepper in a large bowl.
- Cover the mixture and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- Peel the cucumbers and slice them into approximately 1/4-inch thick rounds.
- Spread or spoon the chilled rice mixture onto each cucumber slice to create canapes.
- Serve immediately or keep refrigerated until ready to serve.
