Ingredients

  • 1 cup cooked rice, cooled to room temperature
  • 1 large tomato, peeled and diced
  • 1/2 cup chopped parsley
  • 1/3 cup chopped green onions
  • 2 cloves garlic, minced
  • 3 tablespoons plain nonfat yogurt or sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon ground white pepper
  • 2 to 3 large cucumbers, peeled

Instructions

  1. Combine rice, tomato, parsley, green onions, garlic, yogurt or sour cream, lemon juice, olive oil, and white pepper in a large bowl.
  2. Cover the mixture and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  3. Peel the cucumbers and slice them into approximately 1/4-inch thick rounds.
  4. Spread or spoon the chilled rice mixture onto each cucumber slice to create canapes.
  5. Serve immediately or keep refrigerated until ready to serve.
