Ingredients

  • 1 1/4 cups finely diced, peeled cucumber
  • 1 1/4 teaspoons sugar
  • 3/4 teaspoon salt
  • few grains pepper
  • 2 teaspoons lemon juice
  • 1/2 cup sour cream
  • lettuce

Instructions

  1. Sprinkle the finely diced, peeled cucumber with sugar, salt, pepper, and lemon juice.
  2. Fold the cucumber mixture into the sour cream until well combined.
  3. Chill thoroughly before serving.
  4. Serve in lettuce cups or sherbet glasses lined with the heart of lettuce leaves.
  5. Garnish with thin slices of radish and a sprig of parsley.
