A refreshing Chinese cucumber salad with a tangy, savory dressing, perfect for light meals or as a side dish to complement Asian-inspired dishes.

Ingredients

  • 1 Tbsp. soy sauce
  • 1/4 cup wine vinegar
  • 1 Tbsp. sugar
  • 1 Tbsp. vinegar
  • 1 Tbsp. vegetable oil
  • 1 dash sesame oil
  • 1 tsp. crushed red pepper
  • 2 cucumbers, sliced thin

Instructions

  1. Mix soy sauce, wine vinegar, sugar, vinegar, vegetable oil, sesame oil, and crushed red pepper in a salad bowl thoroughly.
  2. Add the sliced cucumbers (and bell pepper if desired) to the dressing.
  3. Chill the salad well before serving.
