Ingredients

  • 1 cucumber, peeled and seeded
  • 8 oz. cream cheese, softened
  • 1/2 medium onion, finely ground
  • dash of salt
  • dash of red pepper
  • drop of green food coloring

Instructions

  1. Grind the cucumber pulp.
  2. Place the ground cucumber on cheesecloth and squeeze out the juice.
  3. Combine the cucumber pulp with softened cream cheese, finely ground onion, salt, and red pepper, mixing thoroughly.
  4. Add a drop of green food coloring to achieve a pale green color.
